Peanut Butter Popcorn


3/4 c. Popcorn Kernalsimage

4 Tbs. Coconut Oil

2 tsp. Salt


1 c. Honey

1 1/2 c. Peanut Butter*

1 tsp. Vanilla

(*We’ve used both smooth and crunchy peanut butter and both are great.)


Pop your corn in your favourite manor. We use a popcorn kettle and pop in two batches.  Coconut Oil is our base. Hint… Heat your oil til HOT before adding the Popcorn Kernals for best popping results. Once corn is popped transfer to a large mixing bowl and sprinkle with Salt.

For the Peanut Butter Caramel… FIRST measure all your ingredients. Heat Honey in a saucepan over medium-high heat until boiling, turn heat down and simmer for 2 minutes. Remove pan from heat and stir in Peanut Butter and Vanilla til smooth. Pour PB-caramel over the popped corn and toss til evenly coated. Leave to set-up and cool-down for a few minutes before eating.

Great for little Peas and nursing Mommies. Packed this in everyone’s lunches today too.
