Chia Seed Bars

We’re always on the lookout for economical ways to boost our nutrition around here and although (at least here in New Zealand) chia seeds aren’t exactly cheap, the nutritional density of these bite sized treats makes a little go a long way.

Our recipe is adapted from this one from Wellness Mama (Katie’s a fantastic reference for all things healthy). It is super versatile and can be adjusted to suit different tastes. The recipe we’ve given you is our most favourite.  We have also tried almonds instead of chocolate and almond extract instead of vanilla; twas YUM.

Here’s a fast look at what we use to make these yummy treats:

CHIA SEEDS    DATES   COCONUT OIL   DARK-CHOCOLATE   VANILLA   FOOD-PROCESSOR   MIXING BOWL  LITTLE PEAS (not necessary, but do seem to make everything taste better)

CHIA SEED BARS

2 c. Chia Seeds

3 c. Dates

1 c. Dark Chocolate chopped into nibbly bits (I usually use half or more of a Whitakers 72% Dark Chocolate bar)

4 T. Coconut Oil

1 tsp. Vanilla

Instructions: In a nutshell, mash it all together and voila!

STEP 1

1-Whiz chocolate into nibs and move to a separate mixing bowl.

STEP 2

2-Add dates, coconut oil and vanilla to food processor and mix to a paste. Move paste to bowl with chocolate nibs.

3-Add chia seeds to bowl with chocolate nibs and date paste and combine well with a rubber spatula.

4-Empty mixture into 9×13 pan lined with parchment paper. (Bowl helmet optional.)

5-Press mixture into pan.

6-Put pan in freezer for at least 10 minutes to set up.

7-Check on your fussing baby who was left all alone in the lounge. ☹️

9-Remove pan from freezer and cut into small bite size squares. SAMPLE.

10-Load the remaining bars into a sealed container and store in the freezer. And for goodness sake, Show off your double chin.
